Our young farm Fattoria le Caprine was born in 2016 but it is among the university classrooms in Milan that we have decided to become dairy goat farmers and goat cheese producers. Thanks to our studies in animal husbandry we have understood the importance of a different approach to farming in order to produce very high quality cheeses. And this is why, in our breeding, the Camosciata delle Alpi goats go to pasture regularly; to feed on fresh grass, so as to give us a milk rich in scents and flavors of the territory.
The production methods of our small dairy look towards the North of Italy and France. We produce various types of cheeses, from the freshest to the refined and seasoned goats, with flowery rind or washed rind, soft or semi-hard cheese, with particular or more classic geometries because the work of the dairyman is a work in continuous evolution and continuous study.
Our farm is always open to all those who wish to know our sustainable working method. We will introduce you to the goats of our farm, where animal welfare is the priority and we will show you the artisan laboratory for the processing of milk, where the production of goat cheese takes place. You can also taste our products in a beautiful barn that still retains the charm of the past.
What we would like to convey, through the guided tours of our farm, nestled in the hills of Tuscany, is the passion for our work, the research and constant study of dairy art and, above all, the importance of animal welfare as a starting point for a quality product that expresses the characteristics of the territory.

Un luogo stupendo, gestori affabili, gentili, preparati e disponibili a spiegare tutte le fasi della lavorazione che dal latte porta ala “creazione” dei loro prodotti caseari, yogurt, formaggi vari, ricotta ecc. Formaggi assolutamente da assaggiare e portare a casa. Gradevole anche lo spazio approntato per le degustazioni.

My husband and I really enjoyed our visit to this farm. The people there are so nice and the goats seem so happy! Some really like to be pet, as well. They are so sweet and are obviously well taken care of. The food, of course, including the cheese and olive oil, was delicious. I’d highly recommend a visit here.

Raffaello is passionate about what he does, and you can feel this from the very first moment you meet him. We where a group of 7 ( 4 adults and 3 kids) and we had one of the best experiences in Tuscany. The host dedicated all of his time and patiently answered all our questions about goats breeding and cheese making. The table prepared for tasting was marvellous and included a wide range of cheese produced in the far, great meats & wine. Kids loved the experience as well. If you want to feel the real Tuscan slow life, this is the place for you.

Authentischer Ziegen-Bauernhof mit eigener Käserei! Nicht im direkten Sinne eine touristische Attraktion, aber mit ganz kleinem Hofladen, in dem man den eigenen Ziegenkäse, Olivenöl, Honig und andere traditionell hergestellt landwirtschaftlicher Produkte kaufen kann. Das ganze ist eine kleine authentische Alternative zu den kulturellen Höhepunkten der Toskana

As it was very close to Empoli, we decided to go to this goat farm on a rainy day. This place is the real thing, not fancy made for tourists. We were taken on a journey from birth of goats, through cuddling the goat babies, to the cheese factory and eventually a taste of cheese, wine, meat, honey and more, all from the farm. The taste room was interesting – an old drying room for grain.

Un angolo di paradiso toscano immerso tra vigneti e ulivi. Un’accoglienza calorosa e professionale allo stesso tempo. I formaggi di capra sono assolutamente di alta gamma sia per qualità (freschissimi e artigianali) che per scelta (diverse lavorazioni disponibili, ce n’è davvero per tutti i gusti). Ne abbiamo assaggiati 6 se non ricordo male ed erano tutti buonissimi!
